Segura Vidas uses the méthode champenoise, which is a winemaking technique native to the Penedès region of Spain. méthode champenoise requires a secondary fermentation in the bottle, which is accomplished by adding a mixture of sugar and yeast, called the liqueur de tirage, to still wine. The wine is then bottled and capped.
